Asparagus and Cheese Stuffed Chicken Breasts
Last night I picked up a three pound bag of boneless-skinless chicken breasts as well as a bunch of fresh asparagus. I put the chicken in the fridge to thaw overnight. I had seen the chicken breasts stuffed in the butcher block at Safeway for months and always said, "I should make that some day". Well, I decided today was the day! I preheated the oven to 350 and put a piece of foil (shiny side down) on a jelly roll pan. I finished thawing the chicken in the microwave as I prepped the rest of the items for dinner. The asparagus got rinsed and the ends cut off. I cubed the three different cheeses that I had (I would have shredded them, but they were already in pieces, so tiny cubes it was). Once the chicken was thawed, it was cut as a butterfly fillet. I put the cheese and asparagus in the middle, rolled up the sides, and used toothpicks to keep the chicken rolled up. I put them all on the pan and the remainder of the cheese went on top. I sprinkled the top of them with fresh ground black pepper, onion powder, garlic powder, and a tiny amount of salt. I baked them at 350 for 30 minutes. The small ones were done and the larger pieces were put back in for another 10 minutes. As I walked up the stairs to check on them, the aroma was amazing: It smelled SO yummy I couldn't wait to try them! The comments I got after were dinner included "Dinner was awesome!" and "Dinner was delicious!". I think I have another favorite entree to add to my menu for future meals. Next time I may add chopped green onions to the top or maybe drizzle some cheese sauce over them after putting them on the individual plates...
