Chocolate Cheesecake in the Dutch Oven
This is a Gluten-Free Chocolate Cheesecake. We've made it three times and each time we have perfected it a little bit more. This last time we made it for hubby's birthday and it was GONE - no leftovers (and that also meant no seconds)! After this last time we have decided that this recipe is a WINNER. The first time we made it we bought store-bought GF cookies to use for the crust. It was an okay crust. The second time I made my GF chocolate chip cookies (minus the chocolate chips). The next day we put the cookies into the food processor and crumbed them. It was a lot better. The third time we again used my GF chocolate chip cookies (minus the chocolate chips) but instead of baking them in cookies, I baked the dough in a 9x13 pan for 15 minutes. After the pan cooled, I cut it into squares and crumbed them in the food processor. This time the cookies did much better as a crumb crust. It also saved me time by not having to do pan after pan of cookies.
We are planning on trying different variations soon - chocolate peanut butter, a fruit one, as well as others. If you have any suggestions, please post a comment and let me know!

Dutch Oven Cooking the GF Way
Dutch Ovens aren't just for chili and cobbler, though both are great made in them! Some friends and I have been putting their Dutch Ovens to use the last couple of weeks. We've made Blueberry Cobbler (and changed the berries for subsequent cobblers), a chocolate cheesecake, dump cobblers, and cinnamon rolls. I will do a separate post about each item and include photos when possible. We have a list for recipes to find (sometimes Dutch Oven measurements are not equal to oven/crock pot recipes), recipes to try, recipes to tweak some more (need to experiment more with the recipe and/or the Dutch Oven) and recipes that are winners! So, here's a question...if you were to show up at a Dutch Oven cook-off or a campout with Dutch Ovens, what would you want to see or beg to get a sample of?
Tastefully Gluten-Free: My Challenge
Since my husband and oldest child went 100% Gluten-Free in 2001, my ultimate goal has been to tweak and perfect recipes to taste just like the "wheat" version. After eight years, I feel that I have come a long way! It has not always been easy finding Gluten-Free (GF) ingredients though as the years have gone by it has gotten easier. Many stores now offer GF items and some restuarants are beginning to offer a GF menu. I am excited to share the ups and downs of the GF lifestyle. Please ask questions and I'll do my best to answer.
